70s elusive cornflake cookies

I have a box of corn flakes and a bag of cashews that I want to use up. Found VictoriaBakes's cornflake cookies, seems not bad so I try it out today. Its an easy bake with minimum wash up! It taste very good, not sure its its the coconut oil. (Its my 1st time baking with coconut oil)


Ingredients
  • 1/2 cup butter
  • 1/2 cup vegetable oil (i used organic coconut oil)
  • 4/3 cup brown sugar 
  • 1/2 egg
  • 1/2 cup crushed corn flakes
  • 1/2 cup chopped nuts (i used Cashews)
  • 1/2 cup quick-cooking oatmeal
  • 1 3/4 cups flour
  • 1/2 tbsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract




Directions
  1. Preheat oven to 140 degrees
  2. Cream butter, sugars, vanilla and egg
  3. Add oil
  4. Mix in dry ingredients
  5. Form dough into walnut sized balls
  6. Place on cookie sheet and flatten
  7. Bake for 26 mins (for crunchy cookies)
  8. Cool on pan for a minute or two then transfer to a rack to cool
