Blueberry muffins (or any flavours you prefer)

This is a really versatile recipe from Victoria Bakes

Recipe (makes 8 muffins

  • 1 1/2 cups all-purpose flour
  • 1/2 cup white sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh blueberries
  • 1/2 cup brown sugar (sprinkle onto muffin top before baking)

Additional advice that I will try next time: Add vanilla extract, and use buttermilk

Steps

  1. Preheat oven to 240 degrees C.  Grease muffin tray or line with muffin liners
  2. Combine flour, sugar, salt and baking powder
  3. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture and fold in blueberries
  4. Fill muffin cups liner right to the top. sprinkle brown sugar onto muffin before baking
  5. Once muffins are in the oven, turn oven temperature down to 220 degrees C and bake for 10 mins, then turn the temperature down to 200 degrees to complete the rest of the baking time (10-15min)

I try using nutella, bananas, choco and nuts. All turn out very nice ^^

Old School Bread

I try many bread recipe but with not much success. But this recipe really works (For me, anyways)

I half the recipe:

Bread flour 250g
Sugar 50g
Salt half tsp
Milk power 7g
Butter 40g (I use salted butter)
Yeast 1 heap tsp
Milk 130 ml
Egg 50g (I use 1 egg)

Using my bread maker, I mix everything (but the butter) following the bread maker instructions. Add the butter after everything is mixed.

Rest for 30 mins and mix again with the bread maker.

I divide the dough into 6 portions and shape as I like (I added hotdogs in my buns). After that I line them in the baking tray (my baking tray is non stick so I didn't add any oil) and proof for 1hr.

Before baking I brush the bread with water and milk (You can egg wash for shiny finish. I use milk only as I didn't want to waste an egg). Squeeze some room temp butter in between each bun (I don't know why but I did it :p)

I bake it in my oven (No fan) 160c for 25 mins and turn down to 150 for another 5mins.
